Frozen Spotted Babylon Snails

Spotted babylon snails, frozen whole in the shell. The meat is plump and springy with a clean shellfish sweetness, and the shells are graded for even size across the 2 kg pack.

What you get

• 2 kg whole snails in shell, scrubbed and ready to cook
• Brown-and-white spotted shells, uniform sizing
• Firm, bouncy meat that holds up to boiling and braising

How to cook

Boil: thaw, rinse the shells, then cook in boiling water until the meat is just done. Serve with a garlic and chilli dip.

Chilli marinade: boil first, then soak in a dressing of chilli, garlic, spring onion and vinegar for a few hours.

Avoid overcooking, which turns the meat rubbery.

Storage

Keep frozen at or below −18°C. Thaw in the refrigerator and do not refreeze once fully defrosted.
